Vegan Sausage Casserole (gluten free)

This easy vegan sausage casserole is the perfect 30-minute weeknight meal. It's made with just a few simple ingredients, including vegan sausages, a bell pepper, an onion, tomato sauce, and tomato flavored rice or risotto. This vegan sausage casserole is gluten free, vegan, dairy free, low fat, and can be easily made low carb.

Ingredients
  

  • 4 Italian vegan sausages diced
  • 2 bell peppers diced
  • 1 onion diced
  • 2 cups marinara sauce
  • 1 1/2 cups rice

Instructions
 

  • Cook rice according to package directions. Set aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In an oven safe large skillet, brown the vegan sausages over medium heat. Add the onion and bell pepper and cook until softened, about 5-10 minutes. Add to a 9×13 inch baking dish.
  • Stir in the tomato sauce and rice.
  • Bake for 20 minutes, or until the casserole is heated through and bubbly. Serve immediately.
