Soft Scrambled Eggs (dairy free)

These soft scrambled eggs are dairy-free, and made with dairy-free milk, dairy free cheese, and dairy free yogurt.

Ingredients
  

  • 2 large eggs
  • 1 tablespoon shredded cheddar cheese dairy-free
  • 1-2 tablespoons yogurt dairy-free
  • 1 tablespoon oat milk or other plant-based milk
  • Salt and pepper to taste

Instructions
 

  • In a bowl, whisk together the eggs, cheese, yogurt, oat milk, salt, and pepper.
  • Heat a non-stick skillet over medium heat.
  • Add the egg mixture to the skillet and cook, stirring constantly, for 2-3 minutes, or until the eggs are cooked through but still soft and creamy.
  • Serve immediately.
