Roasted Pepper and Tomato Sauce (dairy free)

his roasted pepper and tomato sauce is made with just four ingredients: jarred roasted red peppers, sun-dried tomatoes, oat milk and nutritional yeast. It is so easy to make, you can have a beautiful gluten free pasta meal with a homemade sauce on the table in minutes.
- 1 jar 12 ounces roasted red peppers, drained
- 1/2 cup sun-dried tomatoes drained and chopped
- 1/4 cup oat milk
- 2 tablespoons nutritional yeast
- 1 teaspoon salt
- 1/2 teaspoon black pepper
In a blender or food processor, combine the roasted red peppers, sun-dried tomatoes, oat milk, nutritional yeast, salt, and pepper. Blend until smooth.
Pour the sauce into a saucepan and heat over medium heat. Stir occasionally until heated through.
Serve the sauce over pasta, rice, or vegetables.
