Prosciutto Breakfast Sandwich (gluten free, Dairy free)

This prosciutto breakfast sandwich is packed with eggs, prosciutto, and mozzarella cheese. It is made on a gluten free bagel.
Servings 1 sandwich

Ingredients
  

  • 1 gluten-free bagel
  • 2 fried eggs topped with everything bagel seasoning
  • 2-4 slices of prosciutto
  • 2 tablespoons mozzarella cheese fat free or dairy free
  • 1 tablespoon ketchup

Instructions
 

  • Toast the gluten-free bagel according to the package directions.
  • While the bagel is toasting, fry the eggs to your desired doneness. If you like your eggs runny, cook them for 2-3 minutes per side. If you like your eggs more cooked through, cook them for 3-4 minutes per side.
  • Once the eggs are cooked, sprinkle them with everything bagel seasoning.
  • Place the prosciutto slices on the toasted bagel.
  • Top the prosciutto with the fried eggs.
  • Sprinkle the mozzarella cheese over the eggs.
  • Drizzle the ketchup over the cheese.

Notes

To serve: simply assemble the proscuitto breakfast sandwich and enjoy! You can eat it right away, or you can wrap it in foil or plastic wrap and take it with you for a quick and easy breakfast on the go.
To store: you can assemble the sandwich and then wrap it in foil or plastic wrap. Refrigerate it for up to 24 hours before eating. When you're ready to eat, unwrap the sandwich and let it come to room temperature for a few minutes before enjoying.
You can also make the sandwich ahead of time and then freeze it. To do this, assemble the prosciutto breakfast sandwich and then wrap it tightly in plastic wrap. Freeze it for up to 3 months. When you're ready to eat, thaw the sandwich overnight in the refrigerator and then let it come to room temperature for a few minutes before enjoying.
