One Pan Peanut Curry (gluten free, dairy free)

This One Pan Minute Peanut Curry is one of my favorite at-home take out curry recipes to make! It is incredibly quick and easy but packed with bold flavors. I always loved ordering in curry take out but its so hard to know if its going to be gluten free or dairy free, so the safest option is to make it myself! This peanut butter curry is easy to make and can be made in 15 minutes or less! It is gluten free recipe, a dairy free recipe and it is a recipe made in one single pan...which means minimal clean up afterwards which is just the way I like it.

- 1 tablespoon olive oil
- 1 white onion diced
- 1 bell pepper diced
- 1 lb boneless skinless chicken
- 1/2 cups spinach chopped
- 1 tbsp garlic powder
- 2-3 tbsp Thai red curry paste
- 1/4 cup gluten free soy sauce or coconut aminos
- 2 cups low fat coconut creamer, coconut cream or coconut milk or oat milk
- ¼ cup peanut butter or peanut free spread
Cook rice according to box directions. If using frozen or microwavable rice skip this step.
Heat the olive oil in a large pot over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes. Set aside.
On a cutting board cut chicken breasts into 1" pieces. Add to the same skillet with 1 tbsp olive oil. Cook on medoum heat for 6-8 minutes or until chicken is fully cooked and reaches an internal temperate of 165.
Add the cooked rice, peppers and onions to the skillet. Add the spinach.
In a separate bowl, mix together garlic powder, Thai red curry paste, coconut cream, peanut butter and soy sauce or coconut aminos.
Pour sauce over top.
Bring to a simmer and cook for 5-10 minutes, until thickened.
Serve hot.
