This Easy Shrimp Creole recipe is a quick and spicy weeknight gluten free dinner with chunky tomatoes and tender shrimp. This classic Southern meal is ready in less than 30 minutes and the best part about it is that this easy weeknight dinner is made in one pan. It is perfect for a busy weeknight dinner because we all know I hate doing dishes.
Homemade shrimp creole brings the classic taste of New Orleans into your kitchen without having to order takeout! Anything that saves me money is a win in my book. The shrimp is simmered in fresh tomato sauce and served over rice. This recipe is gluten free and dairy free.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 14 oz diced tomatoes, undrained
  • 14 oz tomato paste
  • 1 cup seafood broth
  • 1/2 cup white wine
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper adjust to taste
  • Salt and pepper to taste
  • 1 pound shrimp peeled and deveined
  • 1 cup green beans trimmed and cut into 1-inch pieces
  • 1 cup cooked white rice

Instructions
 

  • Sauté the onion: Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Stir in garlic and cook for 30 seconds more.
  • Create the base: Add diced tomatoes, tomato paste, seafood broth, white wine, thyme, cayenne pepper, salt, and pepper to the skillet. Bring to a simmer, reduce heat and let simmer for 15 minutes, stirring occasionally.
  • Cook the shrimp and green beans: Add shrimp and green beans to the skillet. Cook until shrimp turns pink and green beans are tender-crisp, about 5 minutes.
  • Serve: Serve the shrimp creole over cooked white rice.
