One Bowl Raspberry Lemon Bread Recipe (gluten free)

When I first went gluten free and nut free, it was so hard to find dessert recipes were gluten free but didn't necessarily taste gluten free. I wanted to be able to bring a baked good to a party and even thought I know its gluten free and can enjoy it, everyone else can enjoy it too. This Raspberry Lemon Bread is bright and flavourful... Not to mention it is beautiful! I love to dress it up with fresh berries, or enjoy it warm right out of the oven. The perfect treat for a weekend afternoon!

Ingredients
  

  • 1 1/2 cups gluten free flour
  • 1 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 cup applesauce
  • 1/3 cup fat free plain yogurt or vegan yogurt
  • 1/2 lemon squeezed
  • 1/2 cup oat milk or other plant milk
  • 1 cup frozen berries

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a loaf pan with butter or cooking spray for easy removal of the loaf later.
  • In a large mixing bowl, whisk together the dry ingredients: 1 ½ cups gluten-free flour, 1 ¼ cup sugar, and 1 teaspoon baking powder.
  • In a separate bowl, combine the wet ingredients: 1/3 cup yogurt, 1/2 cup oat milk, 1/2 lemon juiced (around 3 tablespoons), and 1/4 cup applesauce. You can whisk or use a fork to mix these well.
  • Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Be careful not to overmix, a few lumps are okay.
  • Gently fold in the 1 cup of frozen berries.
  • Pour the batter into your greased loaf pan.
  • Bake for 65-75 minutes at 350°F (175°C), or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely before slicing and serving.
