This No Breading Chicken Parm is my go-to when I’m craving Italian comfort food without the extra carbs. It’s quick, simple, and totally gluten free — all the classic flavors you love, made lighter and easier at home.
Season each chicken breast generously with salt, pepper and garlic. You can also add Italian seasoning to the seasoning mixing if you like.
Heat the olive oil in a skillet on medium heat. Pan fry until the chicken is fully cooked, about 15 minutes.
Top each chicken breast with shredded mozzarella cheese.
Add the marinara sauce to the pan and simmer on a low heat for 2-4 minutes or until the cheese has melted a little. Or, you can pop the skillet into the oven and broil it until the cheese has melted.
Top the dish with fresh bruschetta, finish with basil, salt and pepper.
