Low carb lettuce wraps are a quick, easy, and healthy weeknight meal that is sure to please the whole family. They are packed with flavor and nutrients, and they are also incredibly easy to make. These low carb lettuce wraps are gluten free, dairy free, low fat and low carb.
One of the best things about low carb lettuce wraps is that they are very easy to make. All you need is a 4 simple ingredients: lettuce, chicken and bbq sauce! You can have them on the table in under 30 minutes.

Ingredients
  

  • 2 boneless skinless chicken breasts or thighs
  • 1/2 cup water or chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 cup BBQ sauce
  • 1 head lettuce leaves separated
  • chopped red onion optional for topping
  • sauted peppers optional for topping
  • sliced pickles optional for topping

Instructions
 

  • Place the chicken in the slow cooker.
  • Add the bbq sauce, water, salt, pepper, and garlic powder.
  • Cover the slow cooker and cook on high for 3-4 hours, or until the chicken is cooked through.
  • Shred the chicken with two forks and add to a bowl.
  • To assemble the lettuce wraps, place a spoonful of shredded chicken in each lettuce leaf.
  • Top with your desired toppings and extra bbq sauce!
  • Fold up the lettuce leaf and enjoy!

Notes

Serving: Low carb lettuce wraps can be served as a main course or as an appetizer. They are also a great option for lunch or dinner on the go.

Tips for reheating: If the low carb lettuce wraps are dry, you can add more bbq sauce. If the bbq chicken was frozen, you may need to microwave them for longer or add more sauce. You can also reheat the bbq chicken in a skillet over medium heat. Add a splash of water or bbq sauce to the skillet to prevent the chicken from drying out.
