Low Carb Fried Rice

- 1 cup brown rice frozen or cooked ahead of time
- 1 cup cauliflower rice
- 1/2 cup roasted broccolini chopped
- 1/2 cup carrots chopped
- 1/2 cup roasted onions chopped
- 1/4 cup cashews
- 2 tbsp sesame oil
- 2 cloves garlic minced
- 1 tsp ginger grated
- 1 tbsp coconut aminos or gluten free soy sauce
- Salt and pepper to taste
- Optional 1/2 pound pork cooked and shredded
Heat the sesame oil in a large skillet or wok over medium heat.
Add the garlic and ginger and cook for 1 minute, or until fragrant.
Add the broccolini, carrots, and onions and cook for 5 minutes, or until soft.
Add the brown rice, cauliflower rice, and cashews and cook for 5 minutes, or until hot.
Add the coconut aminos, salt, and pepper to taste.
