Ground Beef Gluten Free Tacos

No dinner excites me as much as a taco tuesday dinner! I love tacos and since I'm gluten free and celiac, they are of course gluten free tacos! I use corn tortillas to ensure they are gluten free. I love the combination of warm tortillas, flavorful garlic chipotle honey taco meat, crisp lettuce, and fresh avocado.These gluten free taco recipe is a real weeknight hero because it is a one-pan recipe and made in less than 30 minutes.

- 1 lb ground beef
- 1 tbsp olive oil
- 1/2 onion chopped
- 3/4 cup water
- 1 tsp garlic powder
- 1 tsp chipotle seasoning
- 1/2 tbsp honey
- salt and pepper to taste
For the Tacos
- 6 corn tortillas gluten free
- 1 avocado sliced
- 1/2 cup greens or chopped spinach
- 1/2 cup sour cream or dairy free sour cream (optional)
Heat the oil in a large skillet over medium-high heat.
Add the ground beef and brown. Drain off any excess grease.
Add the chopped onion and cook for 3-5 minutes.
Pour in the water, garlic powder, chipotle seasoning, and honey. Stir well to combine.
Bring the mixture to a simmer and cook for about 5-7 minutes.
Season with salt and pepper to taste.
Assemble the tacos using the ground meat mixture on corn tortillas. Top with optional toppings such as greens, spinach, sour cream or avocado.
