- 1 cup white rice
- 1 chicken breast
- 1 tbsp taco seasoning
- 1 cup lettuce shredded
- 1/4 cup salsa
- 2-3 tbsp avocado mashed
Boil the rice according to package directions.
Cut the chicken into 1/2" pieces and toss with taco seasoning. Add to a frying pan with 1 tbsp olive oil and cook on medium until chicken is fully cooked.
Add white rice to the bowl. Top with chicken.
Add shredded lettuce, salsa and mashed avocado.
