Gluten Free Caesar Salad

This Gluten Free Caesar Salad is easy, cheesy and makes for the perfect weeknight dinner or lunch! From the crunch of the crispy chicken and toasted potatoes to the creamy caesar dressing and sharp parmesan cheese this caesar salad is delicious.
This recipe is gluten free, nut free can be made dairy free.

Ingredients
  

For the chicken:

  • 2 chicken breasts
  • 2 egg whites
  • 1 cup italian seasoned breadcrumbs gluten-free

For the roasted potatoes:

  • 2 cups red potatoes quartered
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

For the salad:

  • 1 head romaine lettuce chopped
  • 1/4 cup parmesan cheese or dairy free sub
  • 2 tbsp Homemade Caesar dressing
  • 1 Chicken Cutlet recipe above
  • 1 cup Roasted potatoes

For the Caesar dressing:

  • 1 tablespoon Dijon mustard
  • 2 tablespoon mayonnaise
  • 2 tablespoon avocado oil
  • 1 lemon squeezed
  • 2 cloves garlic minced
  • 2 anchovies
  • Salt and pepper to taste

Instructions
 

  • Prep the chicken: Preheat your air fryer to 400°F (200°C). In a shallow bowl, add the egg whites, salt, and pepper. Dip each chicken piece in the egg wash, then coat evenly with breadcrumbs. Place the breaded chicken in a single layer in the air fryer basket and cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  • Roast the potatoes: Toss the cubed potatoes with olive oil spray, salt, pepper, and garlic powder. Spread on a baking sheet and roast in a preheated oven at 425°F (220°C) for 20-25 minutes, or until tender and golden brown.
  • Make the Caesar dressing: In a blender or food processor, combine all dressing ingredients. Blend until smooth and creamy, adjust seasoning with salt and pepper to taste.
  • Assemble the salad: In a large bowl, toss together the romaine lettuce, roasted potatoes, crispy chicken, and parmesan cheese. Drizzle with the homemade Caesar dressing and toss to coat. Serve immediately and enjoy!
