This gluten-free butter chicken bake is a quick and easy weeknight meal. All you need is rice, butter sauce, broccoli, chicken and gluten free breadcrumbs. The dish all comes together in one pan in just 15 minutes! This recipe is gluten free, dairy free, nut free and can be made low carb by serving over brown rice. It can be made vegan by using tofu instead of chicken.
Cook rice of choice according to package directions. You can use frozen rice, instant rice, in a pot or in the rice cooker. Once cooked, set aside.
On a cutting board, cut the chicken into 1” cubes and broccoli into small florets.
In an oven-safe frying pan or skillet, add the chicken and 1 tbsp of olive oil. Saute until chicken is fully cooked and has reached an internal temperature of 165.
