French Onion Smothered Chicken

This easy, one-pan, french onion smothered chicken is the perfect quick and delicious weeknight meal. This dish is made with simple ingredients and can be on the table in just 30 minutes. This meal is gluten freedairy free option and is nut free!
The best part about this french onion smothered chicken recipe is that it’s so easy to make. Just cook the chicken, onions and mushrooms in a skillet. Stir in some white wine and chicken broth. Lastly, top with shredded Gruyère cheese and broil until melted and bubbly.

Ingredients
  

  • 1 pound boneless skinless chicken breasts trimmed and cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large white onion thinly sliced
  • 2 cups mushrooms sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1/4 cup fresh parsley chopped
  • 1/2 cup Gruyère cheese

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the onions and cook until they are fully browned, soft and caramelized.
  • Add the chicken, mushrooms, salt, and pepper to the skillet. Let simmer for 5 minutes.
  • Stir in the white wine and chicken broth. Bring to a boil, then reduce heat to low and simmer for 10 minutes, or until the chicken is cooked through.
  • Stir in the parsley and top the chicken with Gruyère cheese. Cover and cook on low heat until the cheese is fully melted.
  • Serve immediately.
