  • 2 tablespoons eggplant spread
  • 1/2 avocado mashed
  • 1 tablespoon fat-free or vegan feta cheese
  • 3-5 cherry tomatoes cut in half
  • 2 tablespoons pine nuts
  • 2 tablespoons green onions chopped
  • Olive oil salt, and pepper to taste

Instructions
 

  • Toast the bread.
  • Spread the eggplant spread on the toasted bread.
  • Top with the mashed avocado, feta cheese, cherry tomatoes, pine nuts, and green onions.
  • Drizzle with olive oil and season with salt and pepper to taste.
