Fajita Pizza (gluten free)

This fajita pizza is made with a gluten free crust and topped with nutritious ingredients like lettuce, grilled corn, fried fajita seasoned corn tortilla strips, grilled chicken, feta cheese, diced red onion and diced red bell pepper.

Ingredients
  

  • 1 gluten free pizza crust make sure its vegan or dairy free if needed
  • 1 cup shredded cheddar cheese or dairy free option
  • 1/4 cup sour cream or dairy free option
  • 1/4 cup salsa
  • 1/2 cup lettuce shredded
  • 1/4 cup grilled corn kernels cut from the cob
  • 1/4 cup grilled chicken, diced omit for vegan option
  • 1/4 cup feta cheese or dairy free option
  • 2 tbsp diced red onion
  • 2 tbsp diced red bell pepper
  • 3 corn tortillas
  • 1 tbsp fajita seasoning

Instructions
 

  • Preheat oven to 425 degrees F (220 degrees C).
  • Spread the cheddar cheese over the pizza crust.
  • Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  • Heat a large skillet or frying pan over medium heat. Cut the corn tortillas into thin strips. Add the tortilla strips to the hot skillet and cook, stirring occasionally, until they are golden brown and crispy, about 2-3 minutes per side. Remove the tortilla strips from the skillet and drain them on paper towels. In a small bowl, combine the fajita seasoning and salt. Toss the tortilla strips with the fajita seasoning until they are evenly coated.
  • Top with the sour cream, salsa, lettuce, corn, tortilla strips, chicken, feta cheese, red onion, and red bell pepper.
  • Let cool for a few minutes before slicing and serving.
