Easy Dairy Free French Toast (gluten free, vegan option)

When I was a kid, french toast was such a treat! Breakfasts before school consisted mainly of toaster waffles, toaster partries or some cereal...but on the weekends when we got french toast, it was the best day ever. I can honestly still smell the french toast cooking while I write this. French toast will always be so nostalgic to me and have a special place in my heart. As an adult now, who is gluten free and dairy free, it was about time I created a recipe for a Gluten Free Dairy Free French Toast that tasted just like the one from when I was a kid.

Ingredients
  

  • 2 slices gluten-free bread or bread of choice
  • 1 egg
  • 2 tbsp oat milk
  • 1 tbsp vanilla extract
  • 2 tbsp ground cinnamon
  • 1 tbsp vegan butter

Optional Toppings:

  • 1/4 cup fresh raspberries mashed
  • 1/4 cup fresh raspberries whole
  • 1 cup unsweetened whipped coconut cream

Instructions
 

  • In a shallow bowl, whisk together the egg, oat milk, vanilla extract, and 1 tbsp of the ground cinnamon. Ensure the mixture is well combined.
  • Melt the vegan butter in a non-stick frying pan over medium heat. Make sure the pan is hot enough to sizzle a drop of water before proceeding.
  • Dip the assembled bread into the custard mixture, ensuring both sides are coated evenly. Let any excess drip off before carefully adding it to the hot pan. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  • Transfer the cooked French toast to a plate. Dollop half of the coconut whipped cream on top.
  • Spread the mashed raspberries evenly onto one slice of bread.
  • Sprinkle with a pinch of cinnamon.
  • Garnish with additional whole raspberries and enjoy!
