Deconstructed Enchiladas (gluten free, dairy free option)

This recipe is made with only 4 ingredients: pulled pork, enchilada sauce, corn tortillas, and cheese. You can use dairy-free cheese to make this a dairy-free recipe, fat-free cheese to make this a low-fat recipe, or cauliflower tortillas to make this a low-carb recipe.

Ingredients
  

  • 3 cups pulled pork
  • 1 15 oz can of enchilada sauce
  • 4-6 corn tortillas
  • 1/2 cup - 1 cup shredded cheddar fat free or dairy free

Instructions
 

  • Cook the pork in the crock pot until fully cooked and easily shreddable. Shred.
  • Add in the pulled pork to a skillet. Top with enchilada sauce.
  • Top with corn tortilla strips.
  • Top with shredded cheese
  • Bake covered, on 375 for 30 minutes.
