Deconstructed Enchiladas (gluten free, dairy free option)

This recipe is made with only 4 ingredients: pulled pork, enchilada sauce, corn tortillas, and cheese. You can use dairy-free cheese to make this a dairy-free recipe, fat-free cheese to make this a low-fat recipe, or cauliflower tortillas to make this a low-carb recipe.

- 3 cups pulled pork
- 1 15 oz can of enchilada sauce
- 4-6 corn tortillas
- 1/2 cup - 1 cup shredded cheddar fat free or dairy free
Cook the pork in the crock pot until fully cooked and easily shreddable. Shred.
Add in the pulled pork to a skillet. Top with enchilada sauce.
Top with corn tortilla strips.
Top with shredded cheese
Bake covered, on 375 for 30 minutes.
