Dairy Free Mashed Potatoes (3 Ingredients)

Ingredients
  

  • 2 pounds russet potatoes peeled and cut into 1-inch chunks
  • ¼ cup vegan butter softened
  • ½ cup oat milk warmed
  • garlic powder to taste (optional)
  • salt and pepper to taste (optional)
  • parsley for garnish (optional)

Instructions
 

  • On a large cutting board, peel and cut potatoes into 1" cubes.
  • Place the potatoes in a large pot and cover with cold water.
  • Add the salt and bring to a boil over high heat.
  • Reduce heat to medium-low and simmer until the potatoes are fork-tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot.
  • Add milk and butter.
  • Mash the potatoes with a potato masher or an electric mixer until smooth.
  • Add garlic, salt, pepper and parsley.
  • Continue mashing until the potatoes are creamy and well combined.
  • Serve immediately and enjoy!
