Bake them up while you prep the dressing, and you'll have crispy, gluten-free croutons ready to join the romaine party.

Ingredients
  

For the crutons

  • 2 slices gluten-free bread torn into cubes
  • 2 tablespoons olive oil
  • 1 tablespoons garlic and herb seasoning

For the dressing:

  • 1 tablespoon Dijon mustard
  • 1/2 cup mayonnaise or vegan mayonnaise
  • 1/2 cup avocado oil
  • 1/4 cup Parmesan cheese dairy-free
  • 2 tablespoons lemon juice
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 2 sardines Optional

For the salad:

  • 1 head romaine lettuce chopped
  • 3-4 gluten-free chicken tenders cooked and chopped

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Make the croutons: In a bowl, toss the bread cubes with olive oil and garlic seasoning. Spread on a baking sheet and bake for 10-15 minutes, or until golden brown and crispy.
  • Make the dressing: In a blender or food processor, combine all dressing ingredients until smooth. Taste and adjust seasonings as needed.
  • Assemble the salad: In a large bowl, toss together the romaine lettuce, chicken tenders, and croutons.
  • Drizzle with the dressing and toss to coat.

Notes

For a spicier dressing, add a pinch of red pepper flakes.
If you don't have a blender or food processor, you can finely chop the sardines and garlic and whisk them into the dressing with the other ingredients.
To make this salad ahead of time, prepare the dressing and croutons ahead of time. Store them in the refrigerator until ready to assemble the salad.
You can also use grilled chicken or shrimp instead of chicken tenders.
