Chicken Sausage Salad

This chicken sausage salad is a quick and easy meal that is packed with the best fall flavors. It is made with apple maple chicken sausage, crispy garlic sweet potatoes, and honey mustard. The chicken sausage and crispy sweet potatoes are made in the air fryer so clean up is easy. It's perfect for a weeknight dinner or lunch.
This recipe is gluten-free, low fat and low carb. It can easily be made dairy-free and vegan by eliminating the hard boiled egg and the chicken sausage.

Ingredients
  

  • 2 cups leafy green lettuce
  • 1 precooked apple maple chicken sausage
  • 1 hard-boiled egg peeled and sliced
  • 1 tomato sliced into wedges
  • 1/2 sweet potato
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp olive oil
  • Honey mustard dressing to taste

Instructions
 

  • Preheat your air fryer to 400 degrees Fahrenheit.
  • Cut the chicken sausage into bite-sized pieces. Place the sausage pieces in a single layer in the air fryer basket.
  • Air fry for 5-7 minutes, or until the sausage is cooked through and browned. Remove from air fryer and set aside.
  • On a cutting board, cut the sweet potato into bite-sized cubes.
  • Toss the sweet potato cubes with a drizzle of olive oil, garlic powder, and onion powder.
  • Place the sweet potato cubes in a single layer in the air fryer basket.
  • Air fry for 10-12 minutes, or until the sweet potato is tender and browned.
  • Throw the chicken sausage back in with the sweet potaotes when there is 1 minute left to warm them.
  • Assemble the salad. Place the lettuce in a large bowl. Top with the chicken sausage, hard-boiled egg, tomato, and roasted sweet potato. Drizzle with honey mustard dressing to taste.
