Cook rice according to package directions.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned. Continue to cook on medium heat, covered until chicken is fully cooked through and reaches an internal temperature of 165, and the broccoli and rice are warmed. Remove chicken from pan and chop into 1" pieces.
In the skillet, add the broccoli and cook until heated through, about 3-5 minutes. Add back the chicken.
Prepare the sauce by whisking together the soy sauce, hot sauce, brown sugar, and sesame oil in a small bowl.
Pour the sauce over the chicken and broccoli. Stir to coat evenly.
Once the chicken and broccoli are heated through, add the cooked jasmine rice to the skillet and stir to combine.
Cook for an additional 1-2 minutes, or until the sauce is heated through. Add optional cashews.
Serve immediately and enjoy!
