- 1 cup jasmine rice
- 2 cups boneless skinless chicken breasts
- 1 cup broccoli florets
- 1/4 cup cashews optional
- 1 1/2 cups soy sauce gluten free (or coconut aminos)
- 1-2 teaspoons hot sauce to taste
- 1 teaspoon brown sugar
- 1 tablespoon sesame oil
Cook rice according to package directions.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned. Continue to cook on medium heat, covered until chicken is fully cooked through and reaches an internal temperature of 165, and the broccoli and rice are warmed. Remove chicken from pan and chop into 1" pieces.
