Burrata Salad (Gluten Free)

This vibrant burrata salad has become my summer staple—fresh, full of flavor, and always a crowd-pleaser. Once the peppers are roasted, it comes together in minutes, making it perfect for effortless entertaining or a speedy weekday meal. It’s naturally gluten free and nut free, with easy swaps to make it dairy free or vegan too. Simple, stunning, and so satisfying.

Ingredients
  

  • 3 bell peppers
  • 1 Burrata ball
  • 2 tbsp fresh basil chopped
  • ½ lemon
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat your grill, grill pan, or oven broiler.
  • Using a sharp knife, carefully slice each pepper in half lengthwise, removing the stem, seeds, and white membranes.
  • Place the pepper halves skin-side up on your preheated grill or grill pan. If using the oven broiler, arrange them on a baking sheet lined with foil. Grill or broil until the edges and skin are nicely charred and blistered. This should take about 10-15 minutes, depending on the heat.
  • Once the peppers are charred, remove them from the heat and let them cool slightly for 10-15 minutes.
  • Arrange the roasted pepper halves on a serving platter.
  • Nestle the ball of fresh burrata in the center or tear it into a few pieces and scatter them amongst the peppers.
  • Drizzle the entire platter with the extra virgin olive oil. Sprinkle the freshly chopped basil evenly over the peppers and burrata. Season generously with salt and freshly ground black pepper to your liking.
  • Right before serving, squeeze the juice of half a lemon over the platter.
