This burrata caprese is a delicious and easy fall salad that is perfect for a quick get-together or fall party. It is made with simple, in season ingredients, like ripe peaches and fresh tomatoes. You serve them with burrata cheese, and balsamic glaze. It can be prepared in just a few minutes.
The grilled peaches add a touch of sweetness and smokiness to the salad, while the fresh tomatoes and burrata cheese provide a refreshing balance. The balsamic glaze ties everything together and adds a touch of acidity.

Ingredients
  

  • 2 ripe peaches sliced
  • 2 heirloom tomatoes sliced
  • 1 ball of burrata cheese halved
  • 1/4 cup balsamic glaze
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Fresh oregano leaves for garnish
  • option to add prosciutto

Instructions
 

  • Preheat your grill or grill pan to medium heat.
  • Brush the peach slices with olive oil and season with salt and pepper.
  • Grill the peach slices for 2-3 minutes per side, or until they are lightly charred and softened.
  • To assemble the salad, place the tomato slices on a serving platter.
  • Top with the grilled peach slices, burrata cheese, and drizzle with balsamic glaze.
  • Season with salt and pepper to taste.
  • Garnish with fresh basil and oregano leaves.

To serve, simply assemble the burrata caprese on a serving platter and drizzle with balsamic glaze. Garnish with fresh basil and oregano leaves.
The burrata caprese can be stored in the fridge for up to 2 days. However, the tomatoes will start to lose their crispness after a day, so it is best to eat the salad within 24 hours.
If you are storing the burrata caprese in the fridge, be sure to keep the balsamic glaze separate. The balsamic glaze can make the tomatoes soggy if it is stored with the salad.
When you are ready to serve, simply drizzle the balsamic glaze on the burrata caprese just before serving.
