Birthday Cake Stuffed Dates Dessert

This birthday cake stuffed dates dessert are made with dates, yogurt and rainbow sprinkles. They are gluten free and easily made vegan.

Ingredients
  

  • 12 pitted dates or regular dates with pit removed
  • 1 cup low fat plain yogurt or vanilla flavor (vegan or dairy free option)
  • 1/4 cup rainbow sprinkles

Instructions
 

  • Cut the dates in half lengthwise.
  • Fill each date half with a dollop of yogurt.
  • Sprinkle the yogurt with rainbow sprinkles.
  • Freeze the dates for at least 2 hours.

Notes

You can use any flavor of yogurt you like.
For a more tart flavor, use Greek yogurt.
You can also add other toppings to the dates, such as nuts, seeds, or granola.
If you don't have rainbow sprinkles, you can use any other type of sprinkles, or even just a dusting of powdered sugar.
