These air fryer sweet potato wedges are irresistibly crispy on the outside and tender and fluffy on the inside—honestly, I can't stop eating them! - 3 medium sweet potatoes cut into 1” wedges
- 3 tablespoons olive oil
- 1 tablespoon garlic powder
- Salt to taste
- Black pepper to taste
- Lemon Pepper Aioli Ingredients:
- 4 tablespoons mayonnaise
- 2 tablespoons lemon-infused olive oil
- Juice of ½ lemon
- Black pepper to taste
In a large bowl, toss the sweet potato fries with the olive oil and garlic powder.
Season generously with salt and pepper. Preheat your air fryer to 380°F (190°C).
Place the sweet potato fries in the air fryer basket in a single layer. You may need to work in batches to avoid overcrowding for optimal crisping.
Air fry for 15-20 minutes, flipping halfway through, until the fries are tender on the inside and golden brown and crispy on the outside.
While the fries are air frying, whisk together the mayonnaise, lemon olive oil, and lemon juice in a small bowl until well combined.
Season generously with black pepper. Taste and adjust lemon juice or pepper as needed.
Once the sweet potato fries are perfectly crispy, remove them from the air fryer.
Serve immediately with the Lemon Pepper Aioli for dipping.
