Air Fryer Elote Hot Dog (Gluten free Option)

When elote or mexican street corn meets hot dog, all air fried together, you get this Elote Hot Dog. Elote, or Mexican street corn, is grilled corn on the cob that has been slathered with lime, cotija cheese, chili powder and mayo. This same combination of ingredients is also called Equites when served in a cup!
For this Elote Hot Dog recipe, think Mexican street corn, but on a hot dog!! This recipe is an easy weeknight dinner that makes little mess and is ready in 30 minute! It is a gluten free dinner with a dairy free option!

Ingredients
  

  • 4 hot dogs
  • 4 hot dog buns gluten-free or regular
  • 2 ears corn shucked
  • 1 cup cooked black beans rinsed and drained
  • 1/4 cup crumbled fat free feta cheese or dairy-free alternative
  • 2 jalapeños thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup low fat sour cream or dairy-free alternative

Instructions
 

  • Prepare the corn: Grill, broil, or char the corn until it develops some char on all sides. Let cool, then cut kernels off the cob.
  • Preheat air fryer: Preheat your air fryer according to manufacturer's instructions.
  • Cook hot dogs and buns: Add hot dogs and hot dog buns to the air fryer basket. Cook until golden brown and heated through, about 5-7 minutes.
  • Assemble hot dogs: Place a hot dog in each bun. Top with charred corn, black beans, crumbled feta, sliced jalapeños, cilantro, and a drizzle of sour cream.
  • Serve: Serve immediately and enjoy!
