5-Ingredient Peanut Butter Oatmeal Bars (Gluten free)

I'm such a sucker for a peanut butter dessert. I love meal prepping a good-for-you dessert early in the week and have it to snack on throughout the week. You guys know I'm celiac so these gluten free peanut butter oatmeal bars are the perfect soft and chewy, but also made in less than 30 minutes with 5 base ingredients!

- 1/2 cup gluten free flour
- 1/2 cup gluten free oats
- 1 cup peanut butter
- 4 ripe bananas mashed
- 1 cup chocolate chips
- 9 peanut butter cups
In a large bowl, combine the flour, gluten-free oats, nut butter, mashed bananas and chocolate chips.
Mix until well combined.
Line a 8x8 pan with parchment paper to ensure easy removal.
Pour the batter into the prepared loaf pan.
Bake in a preheated oven at 350°F (175°C) for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Remove the loaf pan from the oven and top with peanut butter cups.
Return to the oven for an additional 5 minutes, or until the peanut butter cups are melted.
Let cool completely in the pan before slicing and serving.
