Smashed Avocado On Toast

This smashed avocado on toast could not get any easier…or more delicious! The gluten free bread is toasted and topped with ripe mashed avocado and a poached egg! It is seasoned with salt, pepper and parsley.

Ingredients

  • 1 avocado small
  • 1 english muffin gluten free
  • 1 tsp parsley
  • 1/2 tsp garlic salt
  • 1/2 tsp pepper
  • 3 tbsp tbsp cream cheese
  • 2 poached eggs

Instructions

  • Toast the slices of gluten free bread in a toaster until golden brown.
  • Slice your avocado in half. Remove half from the skin and mash on a cutting board.
  • Spread the cream cheese first, then add the mashed avocado onto the slices of bread.
  • Top with poached egg and enjoy!
