Ingredients

  • 1 pre-baked gluten-free pizza crust
  • 1 cup crumbled Gorgonzola cheese or dairy free option. See ingredient section above for substitutes.
  • 1 cup shredded cheddar cheese or dairy free option. See ingredient section above for substitutes.
  • 2 tablespoons olive oil divided
  • 1 cup butternut squash or pumpkin cut into 1/2-inch cubes
  • 1 tablespoon ground cinnamon
  • 1 tablespoon garlic powder
  • ΒΌ cup diced red onion
  • 5 fresh sage leaves
  • 1 tablespoon honey
  • 2 tablespoons minced garlic
  • 2 tablespoons pumpkin seeds or pepitas optional
  • Salt and pepper to taste

Instructions

  • preheat oven to 400.
  • Prepare the butternut squash: Heat 1 tablespoon of olive oil in a pan over medium heat. Add diced onion and cook until translucent and caramelized (around 5 minutes). Add the butternut squash cubes and cinnamon, sauteing for another 10 minutes until browned on the edges.
  • Roast the garlic: While the squash cooks, wrap peeled garlic cloves with 1 tablespoon olive oil in aluminum foil. Add to the preheated oven and bake for 30 minutes or until soft and easily mashed with a fork.
  • Assemble the pizza: Spread mashed garlic over the pre-baked crust. Top with cheddar and mozzarella cheese, followed by the cooked butternut squash mixture and red onion.
  • Drizzle with honey and scatter fresh sage leaves.
  • Bake for approx 10-15 minutes or until cheese is melted, toppings are warmed through. Edges should be crispy and golden brown. Cooking time may vary depending on the crust thickness.
  • Garnish and serve: Remove from oven and top with pumpkin seeds (optional), a drizzle of olive oil, and salt and pepper to taste. Slice and enjoy!
