Prepare the butternut squash: Heat 1 tablespoon of olive oil in a pan over medium heat. Add diced onion and cook until translucent and caramelized (around 5 minutes). Add the butternut squash cubes and cinnamon, sauteing for another 10 minutes until browned on the edges.
Roast the garlic: While the squash cooks, wrap peeled garlic cloves with 1 tablespoon olive oil in aluminum foil. Add to the preheated oven and bake for 30 minutes or until soft and easily mashed with a fork.
Assemble the pizza: Spread mashed garlic over the pre-baked crust. Top with cheddar and mozzarella cheese, followed by the cooked butternut squash mixture and red onion.
Drizzle with honey and scatter fresh sage leaves.
Bake for approx 10-15 minutes or until cheese is melted, toppings are warmed through. Edges should be crispy and golden brown. Cooking time may vary depending on the crust thickness.
Garnish and serve: Remove from oven and top with pumpkin seeds (optional), a drizzle of olive oil, and salt and pepper to taste. Slice and enjoy!
