- 2 pounds russet potatoes peeled and cut into 1-inch chunks
- ¼ cup vegan butter softened
- ½ cup oat milk warmed
- garlic powder to taste (optional)
- salt and pepper to taste (optional)
- parsley for garnish (optional)
On a large cutting board, peel and cut potatoes into 1" cubes.
Place the potatoes in a large pot and cover with cold water.
Add the salt and bring to a boil over high heat.
Reduce heat to medium-low and simmer until the potatoes are fork-tender, about 15-20 minutes.
Drain the potatoes and return them to the pot.
Add milk and butter.
Mash the potatoes with a potato masher or an electric mixer until smooth.
Add garlic, salt, pepper and parsley.
Continue mashing until the potatoes are creamy and well combined.
Serve immediately and enjoy!
