Vegan Baked Potato (Gluten free, Dairy free)
These vegan baked potatoes are a healthy dinner idea is hassle-free. You can add all vegan ranch, chives dairy-free cheese!
Servings: 6 small potatoes
- 6 small potatoes
- 1/4 cup oat milk
- salt + pepper + garlic
- 1/4 cup dairy-free ranch dressing
- 3 pieces of turkey bacon crushed into bacon bits
- 3 tbsp chives
- 1/4 cup shredded dairy free cheddar cheese
Preheat oven to 425.
Place potatoes in a baking dish, and bake uncovered for 40-50 minutes until potatoes are soft and fully cooked.
Set aside and let cool. Keep the oven on.
Once the potatoes have cooled, scoop out the center and place extra fitting in a separate bowl.
Place scooped potatoes shells back in the oven for 7-10 minutes.
With the extra potato filling, add oat milk, salt, pepper and garlic. Mix together.
Remove potatoes from the oven, add extra filling and desired toppings such as vegan cheese, turkey bacon or broccoli. Bake again for another 10-15 minutes.
Remove stuffed potatoes, top with ranch and chives!!
Leftovers of these Vegan baked potaotes can be stored in an airtight container in the fridge for up to 3 days.
Leftovers for this recipe can be stored in an airtight container in the freezer for up to 3 months.
These potatoes are great for a meal prep option as well. You can make as many as you want and store them in an airtight container and warm them up by microwave until they are heated all the way through. I like to cover with a wet paper towel when microwaving so the Vegan baked potaotes stay moist and dont dry out.
