Vegan Apple Bread (Gluten free/Nut free/Dairy Free/Vegan)

This vegan apple bread is perfect for a cozy fall afternoon or a warm cozy breakfast. It is gluten free, dairy free and vegan.

Ingredients

  • Gluten free/Vegan/Nut free/Dairy free/Egg free
  • 2 3/4 cup of Ottos Natural Grain Free Ultimate cookie mix
  • 1/2 cup unsweetened apple sauce
  • 1 tbsp granola butter chickpea butter, peanut butter or other nut butter
  • 1/2 tbsp sugar free maple syrup
  • 1/2 cup oat milk
  • 1 apple diced into 1/2" cubes

Instructions

  • Preheat oven to 350
  • In a bowl, combine all ingredients and mix together fully. Do not over mix.
  • Spray a mini loaf pan with light cooking spray and add batter.
  • Bake for 17-20 minutes or until batter comes out clean on a toothpick. Center should not sink once removed from oven.

Notes

You can store in the fridge for up to 3 days in an air tight container. Do not store on counter. Must refridgerate.
You can store in freezer in an air tight container for up to 3 months. To reheat, microwave for 30-60 seconds before eating.
