Peanut Avocado Roll

This peanut avocado roll recipe is perfect for busy weeknights or when you're short on time. It only requires a handful of readily available ingredients, most of which don't require any cooking. Simply assemble the ingredients by layering them onto a sheet of seaweed paper and folding it into a cone shape. No fancy equipment is needed, and the entire process can be done in under 15 minutes. Peanut avocado rolls are filled with yummy ripe avocados, sweet roasted chopped peanuts and sticky rice! The best part is they are basically just like sushi rolls but the easy at home version! You can also add any toppings from your favorite special rolls from sushi restaurants to these at home rolls as well!

Ingredients

  • 6 slices seaweed paper cut into 4"x4" squares
  • 12 slices avocado about 1/2-3/4 an avocado
  • 2 tbsp peanuts whole or crushed
  • 1/2-1 cup sticky rice
  • 2 tbsp soy sauce (gluten free) optional for topping
  • 2 tbsp spicy mayo optional for topping
  • 1 tbsp sesame seeds optional for topping

Instructions

  • Lay out a square of seaweed paper.
  • Spread 1-2 tablespoons of sticky rice evenly over the seaweed, leaving a small border at the top.
  • Arrange avocado slices and peanuts (crushed or whole) in a line across the center of the rice layer.
  • (Optional) Drizzle with soy sauce, spicy mayo, or sprinkle with sesame seeds.
  • Fold the bottom edge of the seaweed paper over the filling. Then, fold in the sides, bringing them together to form a cone shape. Moisten the top border of the seaweed with a little water to seal the cone.
