chocolate chip caramel cookies

These caramel chocolate chip cookies are hands down the best chocolate chip cookie twist! They are loaded with a chocolate base flavor and topped with vanilla icing, mini chocolate chips and an ooey gooey caramel sauce. These are the perfect cookies that have a chewy center and an extra sweet topping.

Ingredients

  • 1 box chocolate gluten free cake mix
  • 1 cup cool whip
  • 1 egg
  • 1/2 cup Vanilla Icing
  • 1/2 cup Mini chocolate chips
  • 1/2 cup caramel sauce

Instructions

  • Mix together boxed cake mix, cool whip and the egg. Mix until fully combined.
  • Scoop handful of cookie dough into your hand and roll into a ball.
  • Place on parchment linked cookie tray.
  • Bake on 350 for 8 minutes.
  • Once cookies have cooled, top with vanilla icing, mini chocolate chips and caramel.

how to make this vegan

To make this recipe vegan though you will need to experiment with an egg substitute and plant based cool whip. In the past I have tried mashed bananas, vegan egg substitures and applesauce - you can experiment with any of these options.
