Breakfast Tortilla Pizza (gluten free)

This breakfast tortilla pizza is a healthier and easy take on pizza... plus its for breakfast! Pizza and breakfast are about my two favorite meals and when I found a way to combine them I thought "It doesn't get any better than this!" This breakfast tortilla pizza is really easy to make your own, which is why I love this recipe! You can use up any type of eggs or egg substiture. Want to make this breakfast tortilla pizza healthy? You can choose from any type of cheese, veggies and toppings. Looking for a southwestern flair? Use cheddar cheese, black beans and avocado! Looking for a spicy flavor? Use spicy mayo, spinach and feta! You can literally mix and match toppings for this breakfast tortilla over and over again without ever making the same one twice!
This breakfast tortilla pizza is perfect for a weekend treat, or to make for a fun brunch get together. You can make more than one at a time and slice it up into bite size pieces!

Ingredients

  • 1 tortilla gluten free
  • 2 eggs fried
  • 1/2 cup fresh spinach diced
  • 1/4 cup cheddar cheese fat free
  • 1/4 cup mozzarella cheese fat free
  • 2 tbsp chipotle aioli
  • 2 slices turkey bacon crispy and crumbled
  • 1 tbsp ketchup
  • 1 tbsp feta fat free
  • 1 hashbrown air fried

Instructions

  • Preheat the oven to 350.
  • Add the tortilla to a parchment lined baking sheet. Top with cheese and spinach.
  • Bake tortilla for 3-5 minutes or longer until crust is crispy around the edges and the cheese is melted.
  • While the tortilla is baking, make the eggs, tortilla and bacon according to your prference. I air fried the turkey bacon with the hashbrown for 5 minutes and fried my eggs.
  • Remove the pizza once fully cooked. Top with eggs, crumbeled bacon, chipotle aioli and a ketchup drizzle.
