Vegan Banana Waffles Recipe (gluten free, oil free)

These Vegan Banana Waffles are so good you wont even realize they're good for you! They're perfect for breakfast, brunch or even to meal prep and store in the freezer for a lazy day!

Ingredients

  • 1 1/2 cups gluten-free flour blend
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 cup coconut sugar
  • 1 1/2 cups plant-based milk your preference soy, almond, oat etc.
  • 1 mashed banana

Instructions

  • In a large bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and coconut sugar.
  • In a separate bowl, whisk together the plant-based milk, mashed banana until well combined.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Don’t overmix, a few lumps are okay!
  • Preheat your waffle iron according to the manufacturer’s instructions. Spray lightly with non-stick cooking spray if needed.
  • Pour about 1/2 cup of batter onto the preheated waffle iron and cook for 3-4 minutes, or until golden brown and crispy.
  • Repeat with remaining batter.
  • Enjoy your waffles warm with your favorite toppings, like fresh fruit, berries, maple syrup, or vegan whipped cream.
