In a large bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and coconut sugar.
In a separate bowl, whisk together the plant-based milk, mashed banana until well combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Don’t overmix, a few lumps are okay!
Preheat your waffle iron according to the manufacturer’s instructions. Spray lightly with non-stick cooking spray if needed.
Pour about 1/2 cup of batter onto the preheated waffle iron and cook for 3-4 minutes, or until golden brown and crispy.
Repeat with remaining batter.
