Fluffy Cinnamon Dairy Free Waffles (gluten-free)

These Cinnamon Dairy Free Waffles are easy to meal prep and freeze for an easy breakfast.These are gluten-free and dairy free.

Ingredients

  • 1 1/2 cups gluten-free flour blend use a blend with xanthan gum already included
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 cup coconut sugar
  • 1 1/2 cups plant-based milk your preference, soy, almond, oat etc.
  • 2 large egg whites

Instructions

  • In a large bowl, whisk together the dry ingredients: flour, baking powder, salt, cinnamon, and coconut sugar.
  • In a separate bowl, whisk together the plant-based milk and egg whites until well combined.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Don't overmix, a few lumps are okay!
  • Preheat your waffle iron according to the manufacturer's instructions. Spray lightly with non-stick cooking spray if needed.
  • Pour about 1/2 cup of batter onto the preheated waffle iron and cook for 3-4 minutes, or until golden brown and crispy.
  • Repeat with remaining batter.
  • Enjoy your waffles warm with your favorite toppings, like fresh fruit, berries, maple syrup, or vegan whipped cream.
