This vegan cornbread recipe uses vegan cheese, applesauce and oat milk to keep it vegan. This vegan cornbread recipe is perfect to serve with chili, or even on the side of a soup! You can even made this vegan cornbread into stuffing for thanksgiving!
This recipe make spicy and sweet, moist cornbread. This vegan cornbread recipe is gluten free, dairy free, vegan and nut free! Plus, my favorite part about this vegan cornbread recipe is it only requires one bowl!

Ingredients

  • 1 cup cassava flour
  • 1 cup cornmeal
  • ¼ cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon garlic salt
  • 1 cup oat milk
  • ¼ cup avocado oil
  • 1/4 cup applesauce

Instructions

  • Add all the ingredients minus the plant based cheese to a bowl. Mix together.
  • Line a 9x9 pan with parchment and add half the batter.
  • Dice the cheese into smaller pieces, sprinkle evenly creating a cheese layer. Add remaining batter on top.
  • Bake for 25-30 minutes at 425.

I like to serve this vegan cornbread recipe as a side for thanksgiving, or christmas or any other cozy occassion like sunday night football or friendsgiving. I like to serve it with some vegan butter.
You can store this vegan cornbread recipe in the fridge for up to 3 days in an air tight container. Do not store on counter. Must refridgerate.
You can store in freezer in an air tight container for up to 3 months. To reheat this cornbread in the microwave for 60-90 seconds before eating.
