Ingredients

  • 1/2 cup peanut butter
  • 1/2 cup maple syrup sugar free option
  • 1 cup quinoa flour or oat flour
  • 1 cup chocolate chunks or chocolate chips vegan

Instructions

  • In a large mixing bowl, combine the oat flour, peanut butter, and maple syrup. Using a hand mixer or electric mixer on medium speed, beat the mixture until it becomes smooth and creamy, scraping down the sides as needed.
  • Fold in the vegan chocolate chips with a rubber spatula until evenly distributed.
  • Scoop the cookie dough into bite-sized balls using a spoon or ice cream scoop. Roll the balls between your palms to form a smooth shape.

Notes

  • To make these nut free use tahini, coco tahini or any nut-free peanut butter stubstitute. These substitutes have a similar texture so they will work well!
  • For a richer peanut butter flavor, use dark roasted peanut butter.
  • If the dough seems dry, add a tablespoon of milk or plant-based milk one tablespoon at a time until it reaches a desired consistency.
  • Be sure to choose chocolate chips labeled "dairy-free" or "vegan" to ensure this recipe stays vegan.
  • Mix some pieces into your favorite ice cream for a gluten free cookie dough ice cream!
  • Add replace 1 tbsp of oat flour with cocoa powder to make a gluten free chocolate cookie dough.
