Vegan Stuffed Dates Recipe (Gluten free)

These vegan stuffed dates are the perfect mid day snack or healthy dessert! The best part is that this vegan treat is made with simple ingredients like dates, yogurt and maple syrup!
The perfect sweet snack to satisfy your sweet tooth. This recipe is also perfect for a quick snack or dessert because it's so easy to whip up whenever you need a pick-me-up. The individual serving size makes them portable and perfect for grabbing on-the-go or packing in a lunchbox. 
This great snack is gluten free, dairy free, vegan and nut free!

Ingredients

  • 6 medjool dates
  • 1/4 cup fat free greek yogurt or vegan yogurt
  • 2 tbsp maple syrup sugar free if needed
  • 1 tbsp pumpkin spice
  • 1/2 tbsp cinnamon

Instructions

  • If your dates have pits, carefully slice them open lengthwise and remove the pits. You can also slice them in half if you prefer smaller bites.
  • For pitted or halved dates, gently open them up to create a pocket.
  • In a small bowl, combine the yogurt, pumpkin spice, and cinnamon. Mix well.
  • Spoon the filling into each date pocket.
  • Drizzle with maple syrup.
  • Enjoy immediately for a soft texture, or freeze for at least 1 hour for a firmer, more bite-sized treat.

Notes

  • For a richer flavor, use full-fat vegan yogurt (or coconut cream) instead of fat-free.
  • Get creative with toppings! Try chopped nuts, sesame seeds, shredded coconut flakes, a drizzle of melted vegan chocolate, cocoa powder, chopped dark chocolate or vegan chocolate chips.
  • For more nut based vegan stuffed dates omit the yogurt and use almond butter, cashew butter, creamy peanut butter, sunflower seed butter or pecan nut butter. 
  • For a sweet and salty taste try adding a pinch of sea salt or flake salt on top before serving.
