BBQ chicken flatbread (gluten free)

This bbq chicken flatbread is gluten free and smothered with bbq sauce, shredded chicken, cheddar cheese, mozzarella and red onion!

- 1 gluten free baguette or long roll
- 1-2 cups BBQ sauce
- 1 cup shredded chicken
- 1 cups cheddar shredded or sliced
- 1 cup mozzarella shredded or sliced
- 1/4 cup diced red onion
Slice the baguette in half the long ways.
Top with cheeses. You want the cheeese to be evenly distributed. You can shred it, slice it or even spread the softer cheeses evenly on the bread. Make sure to cover all edges. Next add the shredded chicken, bbq sauce and diced red onion.
Add to a parchment lined baking sheet. Bake at 425 for 15-30 minutes until the edges are crispy and cheese is melted. I like mine to be crispy and browned around the edges and when the cheese in the middle has started to brown.
Remove and let sit for 5 minutes before slicing into 3" slices.
