Cucumber Mediterranean Salad Recipe (Gluten Free)

This cucumber mediterranean salad is gluten free, nut free and vegetarian. It can be made vegan and dairy free by using dairy free feta. This cucumber salad is packed with fresh veggies, good for you fats and mediterranean flavors. This easy salad recipe is perfect as a vegan main dish or even a great side dish!

Ingredients
  

  • 1 can 15 oz cannellini beans, rinsed and drained
  • 1 English cucumber chopped
  • 1 cup fat-free or dairy-free feta cheese crumbled
  • 3 tablespoons extra virgin olive oil
  • 1 tbsp lemon juice
  • 1/4 red onion chopped
  • Salt and freshly ground black pepper to taste

Instructions
 

  • In a large bowl, combine the chopped cucumber, red onion, rinsed and drained cannellini beans, and crumbled feta cheese.
  • In a small bowl, whisk together the olive oil, lemon juice, and a pinch of salt and pepper.
  • Pour the dressing over the salad ingredients and toss gently to coat.
  • Season the salad with additional salt and pepper to your taste.
  • Cover the bowl and refrigerate for at least 30 minutes, or until chilled.
  • Serve cold and enjoy!
