Easy Baked BBQ Chicken with Cheese Recipe (gluten free)

Ingredients
  

  • 2-3 cups fingerling potatoes
  • 1 tablespoon olive oil
  • 2 scallions thinly sliced
  • 1/2 cup BBQ sauce
  • 2 cups shredded cooked chicken
  • 1 cup shredded cheddar cheese
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In your oven-safe skillet, heat the butter and olive oil over medium heat.
  • Add potatoes and bake for 20-25 minutes or until potatoes are golden brown.
  • Add the scallions and bake for about 2 more minutes, until softened and fragrant.
  • Remove from oven. Stir in the BBQ sauce and chicken.
  • Season with salt and pepper to taste.
  • Sprinkle the shredded cheddar cheese evenly over the top of the chicken mixture.
  • Place the skillet back in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
  • Remove the skillet from the oven and let it cool slightly before serving.

Notes

Slow cooker shredded Chicken: Add the large chicken breasts in the slow cooker with 2-3 cups of any chicken broth, chicken stock or bone broth to give the shredded chicken extra flavor. If you do not have chicken broth, chicken stock or bone broth you can use water with sea salt, black pepper, garlic powder and onion powder. Cook on high for 2-3 hours or until the chicken is fully cooked.
