Vegan Apple Loaf (Gluten free/Nut free/Dairy Free/Vegan)

I don’t know about you but a fresh-out-of-the-oven apple loaf is where it’s at on a cozy fall afternoon. This Vegan Apple Loaf is warm, fluffy.. plus it leaves your home filled with the smell of fresh baked cinnamon apples.

Theres very little clean up since it only uses 1 bowl and 1 mini loaf tray!

INGREDIENTS & SUBSTITUTIONS

Ottos Natural Grain Free Ultimate cookie mix

For the vegan apple loaf I used ottos natural grain free cookie mix. I have not tried this recipe with other cookie mixes or with flour. This cookie mix can be bought online and its gluten-free, grain-free, dairy-free and nut-free.

unsweetened apple sauce

This recipe calls for unsweetened apple sauce. You can choose to sub sweetened apple sauce as well. Store bought is fine and if you do not have it you can make your own applesauce at home. The idea is to add moisture to the recipe. If you do not have apples you can use mashed bananas or pumpkin puree instead. This recipe is vegan so make sure to use a vegan substitute.

granola butter, chickpea butter, peanut butter or other nut butter

This vegan apple bread calls for any type of nut butter or chickpea butter. Anything with the consistency of peanut butter can be subbed. You can even sub chocolate hummus if you cannot eat nuts. This recipe is vegan so make sure to use a vegan substitute.

sugar free maple syrup

This recipe uses sugar free maple syrup to not add any extra sugar. You can sub regular maple syrup as well. It does not matter what grade maple syrup, they will all work. If you do not have maple syrup you can try honey instead.

oat milk

This vegan apple loaf uses oat milk but you can sub any type of plant milk or regular dairy milk. It can be oat milk (gluten-free), flax seed milk, soy milk, coconut milk, plant based milk, almond milk ect. All milks will work the same, even if you choose to use a dairy based milk. You can sub any milk and continue to follow the amounts in the recipe.

Because this is a vegan apple loaf it calls for chunks of apples in the recipe to add to the cake-like fluffy texture. You can leave these out if you do not want the apple chunks inside the bread. You can also choose to sub anything for the apples including blueberries, chocolate chips, nuts, etc.

TASTE & TEXTURE

The texture of this vegan apple loaf is fluffy and cake like. It is very moist and takes the best when heated up in the microwave for 30 seconds before eating. You do not need to top it with anything because it is very sweet and tastes like baked apples. BUT if you choose to add more you can top the vegan apple loaf with peanut butter, vegan butter or any type of chocolate syrup or caramel.

HOW TO MAKE

DIRECTIONS

STEP 1

Preheat oven to 350. In a bowl, combine all ingredients and mix together fully. Do not over mix. 

STEP 2

Spray a mini loaf pan with light cooking spray and add batter.

STEP 3

Bake for 17-20 minutes or until batter comes out clean on a toothpick. Center should not sink once removed from oven. 

EXPERT TIPS & TRICKS

If you do not have a mini loaf pan you can bake them in a muffin or cupcake tin for the same amount of cooking time.

  • 2 3/4 cup of Ottos Natural Grain Free Ultimate cookie mix
  • 1/2 cup unsweetened apple sauce
  • 1 tbsp granola butter chickpea butter, peanut butter or other nut butter
  • 1/2 tbsp sugar free maple syrup
  • 1/2 cup oat milk
  • 1 apple diced into 1/2″ cubes

Instructions

  • Preheat oven to 350
