They are much quicker and easier to make than regular cookies since they use gluten free cake mix! The base of the chocolate chip caramel cookies uses gluten free cake mix, 1 egg and cool whip! Then the cookies are topped with a vanilla frosting, mini chocolate chips and caramel sauce. You can choose to make the frosting and caramel yourself, or save yourself some time and buy store bought icing and caramel! No judgement here! I love a quick hack that cuts down time.

These chocolate chip caramel cookies are very easy to be made gluten free. You don’t have to buy any gluten free flour blend or baking soda or baking powder! It is all about the cake mix you choose!

I have made these chocolate chip caramel cookies with cool whip using the gluten free chocolate cake mix from pillsbury. Other mixes I suggest are king arthurs gf cake mix, cup 4 cup gluten free cake mix or bobs red mill gf cake mix. If you don’t want to use chocolate cake mix, you can use any flavor of gluten free cake mix, dairy free cake mix, vegan cake mix, nut free cake mix, etc. They all will work the same!

cool whip
These chocolate chip caramel cookies are made with cool whip. I have not tried any other version of cool whip but feel free to test it out on your own! Theres a creamier cool whip version, theres dairy free cool whip versions, vegan cool whip versions, coconut cool whip versions! The possibilities are endless. You may need to adjust the amount based on the type of cool whip you use.

Eggs
This recipe calls for 1 egg to help bind the cookies together. I have not tried this recipe without adding the egg, or with using an egg substitute but you can! Feel free to leave a comment if you do!

Make sure your icing, chocolate chips and caramel sauce is vegan too! It’s a bunch of vegan substitures but they will taste the same!

if i use bananas, how ripe should my bananas be?
The riper the better!! I like to use bananas when theyre turning brown, or once they’ve already turned fully brown. This way they are sweeter! If a banana has already turned partially or fully brown but youre not ready to use yet, you can throw them in the freezer and keep them for up to 2-3 months until you are ready to make this!
Once you’re ready, let the banana thaw by sitting out for 2-3 hours on a papertowel to absorb the moisture from defrosting, or else it will make a mess! Also, once the banana thaws it will be a mushy texture which is actually perfect to bake these cake mix cookies with!
